Given up butter? Well research
shows that some margarine's are made with chemically hardened vegetable
oils - a process which can actually convert the GOOD polyunsaturated
fat into BAD trans fats, the type believed to be linked to heart
disease. Margarine also contains emulsifiers, preservatives and
artificial colours and flavours and salt. So it could be that a
low salt butter used sparingly could actually be the healthier option.

ONION AND PEPPER COUSCOUS |

Fat per serving 1g
4oz (115g) couscous
1 de-seeded, thinly sliced red pepper
1 de-seeded, thinly sliced yellow pepper
4 medium spring onions, chopped
7 fl oz (200 ml) hot vegetable stock
Salt and ground black pepper
Extra virgin olive oil
Put couscous in a heatproof bowl stirring in the peppers
and spring onion. Pour over the stock and leave to
stand for 15 minutes. Using a fork fluff up the mixture
and season with salt and pepper to taste. When transferred
to a serving dish, drizzle a little olive oil over
and serve as an alternative to pasta. |

recent study by Cambridge University has confirmed that eating oily
fish
- salmon, mackerel, herring for instance has a protective effect
against inflammatory conditions such as asthma, when eaten on a
regular basis. Their study showed that those who ate oily fish at
least twice a week halved their experience of wheezing and chest
tightness compared to those who ate no oily fish, even after they
took into account other factors such as smoking habits. Oily fish
is rich in Omega 3 fatty acids which are processed in the body to
produce anti-inflammatory chemicals that are believed to reduce
constriction of the airways.
