4oz (100g) golden caster sugar
1 vanilla pod (seeds removed)
1 tabs cinnamon
• Heat the oven to 180-200 degrees. Halve
and de-stone plums
Mix the sugar, vanilla seeds and cinnamon
Toss plums in the mixture then place
them close up on a foil-lined baking sheet,
and then cover with remaining sugar mixture.
Bake for 20 minutes or until sugar
is caramelised. Serve with vanilla ice cream
or a spoonful of whipped or double cream.
