Have you discovered the delicious taste of watercress? This is a really undervalued ingredient which not only tastes good but has some amazing properties. Rich in vitamins A and C it also provides iodine and calcium as well as high levels of beta carotene, thought to protect the body from cancer. It's peppery taste and lovely dark green leaves make it an ideal garnish for red meats but try to include it in larger quantities in soups, flans and salads to enjoy its benefits.
English watercress is usually available in supermarkets from around May to October and during the winter months it is sourced from Spain and Florida.
                  
For a really quick and easy dessert simply heat up a 284ml pot of single cream in a small saucepan until almost boiling.

Break up a 200g bar of your favourite chocolate into a dish and pour over the hot cream.

Mix thoroughly till chocolate has melted then pour into little serving dishes and chill for a few hours.

This will make 4-6 portions depending on size of serving dishes. Remove from fridge 10 minutes before serving.
                  
 

Strawberry Surprise

You will need:

1 x 170g can of evaporated milk
1oz (25g) caster sugar
8iz (225g) fresh strawberries
1 x 200g carton Greek yoghurt

Instructions

• Whisk the evaporated milk with a mixer until it has nearly doubled in volume
• Whisk sugar into the milk mixture
• Puree the strawberries either in a food processor or by hand, removing stalks
• Stir the puree and the yoghurt into the milk mixture
• Spoon the mixture into a serving glass then chill for a few minutes in the fridge
• Decorate with whole strawberry or to your taste and serve at once.
