Wonderful Watercress
Most of us would think of watercress as an insignificant food item but don't under estimate its health properties. This simple food contains a family of Phyto-nutrients called 'isothiocyanates' which are known to fight off harmful free radicals. Watercress is packed with minerals and antioxidant vitamins A & C, aswell as chlorophyll, the pigment that gives watercress its dark green colour.
 

 
DELICIOUS DRESSINGS

  Vinaigrette (French Dressing)
• 4 fl oz (125 ml) oil of choice
• 2 fl oz (50ml) wine vinegar
• ¼ tsp dry mustard
• 1 crushed garlic clove
• ½ tsp sugar
• Salt and pepper

Put all the ingredients into a screw topped jar and shake well until thoroughly blended. This will keep for several weeks. Always shake well before using.

Thousand Island
  • 12 fl oz (350 ml) mayonnaise
• 1 tsp Tabasco Sauce
• 2 tbsps Sweet Pickle
• 2 hard boiled eggs, chopped
• 2 spring onions, chopped
• 3 tbsps French Dressing

Combine all ingredients and beat until thoroughly blended. Chill well.

Blue Cheese
  • 2 oz Blue Cheese (Danish)
• 5 fl oz yoghurt
• salt and pepper

Rub the cheese through a strainer and mix with the yoghurt. Season to taste with salt and pepper and chill well.
